Allergen disclosure — front of house
Australian food businesses must declare the 14 mandatory allergens (gluten, eggs, milk, peanuts, tree nuts, sesame, soy, lupin, fish, shellfish, molluscs, sulphites, mustard, celery — the list expanded under FSANZ in 2024). Most cafes and restaurants now display: an allergen-disclosure poster at point-of-order, allergen icons in menu (gluten-free, vegan, nut-free, dairy-free), and a 'please notify staff of allergies' sign at counter.

Fire & gas — kitchen-specific
Commercial kitchens with gas cooking and deep-fryers require AS 1851-compliant fire-suppression systems (typically wet chemical) over the cook line. Signage requirements include: fire-suppression isolator identification, gas isolation valve location, fire blanket location, K-class extinguisher sign (only K-class is rated for cooking-oil fires).
